Thai Chicken Curry (serves four)
Ingredients:
1 onion
2x tablespoons of red curry paste
375ml light coconut milk
125ml chicken stock
500g chicken breast
250g green beans
1 red pepper
1 tablespoon lime juice
2 tablespoons brown sugar
2 tablespoons chopped coriander

Cooking:
1. Brown onion in a pan
2. Add curry paste for 1min
3. Add coconut milk and stoke, bring to the boil
4. Add the chopped chicken, beans, pepper and simmer for 15mins
5. Add sugar, coriander and stir through
6. Serve with rice
