7. Pasta with broccoli, Goat’s Cheese and Walnuts


Pasta with broccoli, goat’s cheese and walnuts (Serves 4)

For weight gain only

Ingredients:

500g pasta (tagliatelle is best for this)
150g shelled walnuts
300-400g broccoli
4tbs olive oil
4 garlic cloves
100g mascarpone
100g mild goat’s cheese (crumbled)

Cooking:

1. Boil large pan of water
2. Dry fry walnuts in a wok to toast them, then chop and set aside
3. Chop the broccoli and add to the boiling water, cook for 5mins and remove the broccoli from the water
4. Add pasta to the boiling water and cook for 10mins
5. In the wok, heat the oil and add the garlic for a couple of minutes
6. Then add the mascarpone, broccoli to the wok for a couple of minutes
7. Add the cooked pasta to the wok and mix in the goat’s cheese and walnuts
8. Serve in a pasta bowl
