Sweet and Sour Chicken (Serves 4)
Ingredients:
4 chicken breast fillets
1 red pepper
1 orange/ yellow pepper
1 onion
1 tin of pineapple rings
2tbsp vinegar
2tbsp tomato puree
2 tbsp soy sauce
2tbsp sugar
Oil
Plain flour
Brown rice

Cooking:
1. Heat a pan of water to boil the rice
2. Warm oil in a wok
3. Add the brown rice and leave to cook for 20mins
4. Wash chicken, cut into small strips and coat in a little plain flour
5. Fry the chicken, then reduce the heat
6. Finely chop the onion and peppers, cut the pineapple rings into small pieces and add to the wok with the pineapple juice, vinegar, tomato puree, soy sauce and sugar.
7. Leave the wok to simmer for about 10mins.
8. Plate up the rice and add the Sweet and Sour Chicken after.
